Rolled Swordfish

This recipe usually prepare my partner and he likes very much.
Unfortunately it is one of those dishes that we prepare very few times because the smoked swordfish costs a lot of money and we at this time we broke a lot!
However, like all the recipes that I propose, is fast, simple and safe effect!

AUBERGINE ROLLS WITH SWORDFISH

  • 1 eggplant, cut into long thin slices and put some hours in salt)
  • 100 gr of smoked swordfish
  • Parmesan (very little)
  • a handful of pine nuts
  • two tablespoons of pesto alla Genovese
  • oil

Grill the slices of eggplant in the oven, let cool and then stuff it with a slice of swordfish head a bit 'of Parmesan and a few pine nuts, roll, secure with a toothpick and season with a little' of the plague. (no need to put the salt, but if you want you can sprinkle with a pinch of white pepper).
Put in oven for ten minutes in a pan with baking paper and serve warm!
They are ideal for a cocktail or an appetizer!
